Saboreal Petiscadas —Various Selection of Artisan Algarve Fish, Slow-Cooked in the Jar

Preserving fish is one of Portugal's oldest traditions, and Parchal was one of the places that did it best — famed across the country for it. This small producer has gone back to those roots and brought modern science to the process, making something genuinely like no other.

The fish is bought straight off the local boats, then shredded by hand and slow-cooked in the jar with vegetables, good olive oil and proper Algarvian seasoning. Open one and tip it onto warm bread, through a salad, or straight over hot pasta for an easy dinner — each jar is its own small plate, no cooking needed.
