The real thing. Ripe Roxa tomatoes, sweet red pepper, cucumber, and new season onion — marinated for 12 hours, then blended with house-made mayo, sherry vinegar, and a touch of Piri Piri into a silky, ice-cold soup that tastes exactly like Mediterranean summer.
⚠️ You will need a hand blender to finish this dish. After defrosting overnight in the fridge, a quick blitz brings the soup back to its silky, emulsified best. It takes 30 seconds and makes all the difference.
Served with two garnish sachets: diced pepper and pickled red onion, and sourdough croutons. Finish with a drizzle of good olive oil and serve in a well-chilled bowl.
