Slow-cooked for depth and richness, this dish layers 12-hour confit duck leg, sous-vide duck breast, Monchique chouriço, and Portuguese cabbage through aromatic Carolino rice. Finished with a glossy duck and orange glaze for bold, comforting flavour in every bite.

Ingredients

Confit duck leg, duck breast, Carolino rice, chouriço, Portuguese cabbage, onion, garlic, red pepper, duck stock, tomato, white wine, Madeira, orange zest, parsley, egg yolk, paprika, olive oil, duck fat, sea salt, black pepper.

Reheating Instructions

Defrost: In the fridge overnight.
Preheat: Fan oven to 190°C.
Reheat: Remove lid and place tray in the oven. Bake for 20 minutes, uncovered.
Check: Ensure it reaches a core temperature of 75°C.
Rest: Let stand for 3–5 minutes before serving.
Caution: Tray and contents will be hot.
