Based on traditional Portuguese cooking with modern techniques. Pork belly brined for 48 hours then slow-cooked for 36 hours, every fava peeled by hand, Monchique chouriço and morcela, slow-cooked refogado base, all brought together with chicken stock and finished with the caramelised pork bellies.

Spring favas are only around for a short window, so this one's only available this month. Comes with a pipette of herb oil—take it out before reheating, drizzle it over before serving.

Ingredients

48-hour brined pork belly (Monchique honey, rosemary, pimentón, garlic, orange zest, lemon zest), Monchique chouriço, Monchique morcela (blood sausage), hand-peeled fava beans, onions, tomatoes, garlic, bay leaf, leeks, roasted red peppers, fresh parsley, fresh coriander, homemade red pepper paste, sherry vinegar, white wine, chicken stock, mixed herb oil, salt, pepper

Reheating Instructions

• Remove the herb oil pipette from the tray and set aside
• Preheat fan-assisted oven to 175°C
• Reheat in the foil tray with lid on for 30 minutes
• Check Temperature: Ensure it reaches a minimum of 75°C throughout
• Rest for 2-3 minutes
• Finish by drizzling the reserved herb oil over the dish before serving
• Caution: Tray and contents will be hot
