These ribs have already done the hard work. Slow-cooked sous-vide for ten hours until the meat is falling from the bone, then frozen and ready for your grill. Defrost, light the coals, and let the glaze do the rest.

Six pieces. A deep, sticky tamarind glaze — sweet, sour, and dark with caramelised sugar and roasted cumin. The satay sauce is the real story. A traditional Malaysian recipe passed on to me during my apprenticeship at the Dorchester by the grandmother who ran all the East Asian cooking. Made from scratch with dry-roasted peanuts, galangal, lemongrass, and kecap manis — the way it has always been made. I have never found a better one.

Toasted sesame seeds included for finishing.

Pork Ribs, Tamarind, Brown Sugar, Tomato Paste, Cumin, Garlic, Lime Leaves, Water, Salt, Dry-Roasted Peanuts, Kashmiri Chillies, Habanero Chilli, Shallots, Lemongrass, Galangal, Coriander, Mace, Black Pepper, Sweet Soy Sauce (Kecap Manis) (Soy), Palm Sugar, Sesame Seeds (Sesame), Vegetable Oil.

Reheating Instructions

• Defrost in the fridge overnight or at room temperature for 2 hours.
• Heat charcoal grill to medium heat.
• Sear ribs slowly, turning to build colour and caramelisation on all sides.
• Brush generously with the tamarind glaze provided. Turn every few minutes, adding another layer of glaze each time.
• Repeat the glazing process 2–3 times. The thicker the glaze gets, the easier it is to catch — keep the heat gentle and take your time.
• Rest 2 minutes. Sprinkle with sesame seeds provided. Add lime juice and zest if you have it.
• Stir satay sauce and serve on the side.
