A vibrant Thai-inspired coconut curry made with roasted cauliflower, aubergine, red pepper, green beans, and oyster mushrooms, simmered in a fragrant green curry sauce infused with lime leaf, chilli, and basil. Finished with coconut milk and palm sugar for a beautifully balanced, aromatic dish.

Reheating Instructions

From Frozen: Preheat oven to 180°C.
Place tray in the oven and heat for 25 minutes, uncovered, until piping hot (core temperature 75°C).
